Instructions to make Pav bhaji:
  1. COOKING VEGETABLES FOR BHAJI.
  2. Assemble all the chopped cauliflower, carrot, potatoes, peas and french beans
  3. Put it inside the pressure cooker.Add two cups of water
  4. Pressure cook the veggies for 5 to 6 whistles on medium flame.
  5. When the pressure cooker settles down, open the lid.
  6. Keep the vegetables in the cooker itself with the cooked water
  7. MAKING BHAJI FOR PAV BHAJI.
  8. Heat 3 tsp butter in a pan. Add cumin seeds and let them crackle.
  9. Then add chopped onions. Saute them on low medium flame till they change their colour.
  10. Then add ginger garlic chilli paste. Saute them for 1 min till the raw smell goes away
  11. Then add chopped tomatoes. Saute them for 2 -3 min on low medium flame till they become soft and butter starts releasing from it's sides.Sprinkle some water if the tomatoes stick to the pan.
  12. Add capsicum and saute for 2-3 min. Capsicum should NOT be cooked till soft
  13. Now add chilli powder, turmeric powder and pav bhaji masala. Mix well.
  14. Add the cooked vegetables along with water from the pressure cooker.
  15. Add salt as per taste
  16. Mash the vegetables with a potato masher directly in the pan.
  17. TIP: Mash more for a tasty bhaji.
  18. Add more water if the bhaji looks thick.
  19. Keep on stirring occasionally and let the pav bhaji simmer for 8 to 10 minutes on a low flame.
  20. Add more water if the consistency is thick.
  21. Add 1 teaspoon of butter on top.
