The ingredients needed to prepare Nei Appam:
  1. Provide 2 cups Raw rice -
  2. You need 1 1/2 cups Jaggery grated -
  3. Get 3/4 cup Wheat flour -
  4. Use 1/4 tsp Cardamom powder -
  5. Provide 1/4 tsp Dry ginger powder -
  6. Get 1 pinch Nutmeg or jaiphal powder
  7. You need pieces Coconut cut into small
  8. Prepare 2 bananas
  9. Provide Ghee for frying
Instructions to make Nei Appam:
  1. Soak the rice for 11/2 to 2 hours
  2. Then drain the water completely and grind it in a mixie.Do not add water and grind it coarsely.
  3. Now add grated Jaggery and cut banana pieces. Grind it with 2 pulse not more.
  4. Then transfer it to a bowl and add wheat flour. Cardamom powder, dry ginger powder, jaiphal powder and a pinch of salt. Mix all the ingredients well so that no lumps are formed.
  5. In a small pan add little ghee and fry the cut coconut pieces till golden brown. Add it to the appam batter.
  6. You can make appams immediately. But here I have rested the batter for about 1/2 hour to 45 minutes.
  7. Heat ghee in a Kadai on medium flame. Take a small amount of batter in a small ladle and drop it gently into the ghee.
  8. When it puffs, turn over and cook the other side till golden brown. Drain the ghee using a slotted ladle and take it out from Kadai. Deep fry one appam at a time. Repeat the process for rest of the batter.
  9. Nei Appam is ready to serve.
