Instructions to make Allam Pachadi:
  1. Wash, peel and chop ginger into small pieces. Pat it dry. Now in a pan, heat oil and add urad daal. When it turns light pink in colour, add hing and chopped ginger pieces. Saute it for 3 to 4 minutes on medium heat. Now add turmeric and red chilli powder to it and mix everything well. Turn off the gas and let it cool down to room temperature.
  2. Take ginger pieces into a mixer jar and add salt and tamarind pulp to it. Now blend it. Now add jaggery to it and blend it one more time to a fine paste.
  3. Heat oil in a pan and add mustard seeds. When it crackles, add urad daal and make it light pink. Add hing and curry leaves to it and add prepared chutney to it. Mix everything well and turn off the gas. Now add the roasted fenugreek powder to it and mix it well. Let it cool down to room temperature.
  4. Allam Pachadi is ready to serve with Idli, Dosa, Vada or as a side dish with a main meal.
