- Heat 1 tbsp oil in a pan. Add 1-2 chopped green chilies, 1 tbsp ginger paste and saute.
- Add 1 cup grated fresh turmeric root, salt as per taste and stir fry till the turmeric turns soft.
- Add the yogurt mixture and around 2 cups of water. Stir well, cover and allow the turmeric to cook and water to reduce.
- Once cooked add 1 tbsp sugar and 1 tbsp chopped coriander leaves. Saute, cover and let it remain on low flame for 2-3 minutes. Remove from flame.
- Transfer it to the serving bowl. Make a tempering using oil, mustard seeds, curry leaves and chopped green chilies. Add the tempering over the sabji, pour 1 tbsp homemade melted ghee and serve with parathas.
